油は抽出法と圧搾法で取り出されます

ゴマや大豆などから油を取り出す方法には大きく分けて2つの方法があります。抽出法と圧搾法です。抽出法は、種に含まれる油を溶剤に溶かし出した後に加熱して溶剤だけを蒸発させる方法です。この方法を使うと種に含まれる油を効率良く取り出すことが出来るので広く用いられています。
もう1つの圧搾法は古くから用いられている方法で、種に高い圧力をかけて油を搾り出します。「玉締め搾り」などと呼ばれ、鉄釜や石臼に炒った種を入れ、その上から丸い石で圧力を加えてゆっくり油を搾ります。この方法では含まれている油の2、3割ぐらいしか取り出すことが出来ないので効率は悪いですが、高温にならず、他の物と混じる事も無いので油の風味が損なわれません。
今回は山口県にある株式会社サン精機様より「小型手動搾油機　K-15T」をお借りしました。少量の種を圧搾法で搾る手動式の装置です。これで風味の損なわれていない搾りたての油が味わえる！

圧搾法

植物から油を搾り出す方法です。

溶剤抽出法とは違い、高温にならないため、酸化しない（トランス脂肪酸が生成されない）。特に酸化しやすいオメガ３を含む油は、この方法になります。溶剤を使用しない昔ながらの方法です。

品質としては、最高ですが、溶剤抽出法と比べ、手間がかかるため高価になります。また、圧搾法で製造するところも数少ない。

   自然エネルギーファーム：エネルギーを考える。

   みなさんこんにちは

   先の震災がきっかけとなり、今年度は
   「自然エネルギーについて考える」ことを目的とした『空土　自然エネルギーツアー』
   が行われました。

   一連の流れを振り返りながら、今回は文字通り「自然エネルギーについて」考えてみたいと思います。

   ５月にタネをまきました。

   品種は『春リンゾウ』といって、油がいっぱい採れる搾油用品種。

   ヒマワリは、
   観賞用や、リスなどのエサ用、このプロジェクトで使用した搾油用。
   など、さまざまな品種が開発されています。
   そのようなタネも、皆さんのお力で、あっという間に播き終りました。

   ８月の空土キャンプのときに満開。

   
2. 一番きれいな時期を楽しむことが出来ました。
   ９月に収穫。
   
   パンパンに油の詰まった花柄を、今度もあっという間に収穫しました。
   その後、山梨大学の協力で実際の搾油の様子を見学し、ＢＤＦ生成の実験も行いました。
   そして、先日ヒマワリの種が８．４Ｌの油となって、搾油されました。
   ここで、エネルギー源として考えてみようと思います。
   ８．４Ｌの油がそのままＢＤＦとして、軽油の代わりに使えたとします。
   今、場所にもよりますが軽油のお値段は１リットル１００円くらい。
   つまり、８４０円のＢＤＦを皆さんで作ったということです。
   （１００円／Ｌ　×　８．４Ｌ）
   感じ方はいろいろあるかと思いますが、安すぎると感じます。
   直接的には耕耘や収穫した花の乾燥、脱粒、搾油の労賃が
   この８４０円から捻出されることを考えると、
   現実性に欠ける点もあろうかと思います。
   ただ、ひとつの可能性として、ツアーで見学していただいた山梨大学での実証のように、
   「使い古しの（産業廃棄物としての）廃食油」を、
   「有価なＢＤＦに変換し、使用」する。
   等の取り組みには、可能性があるようです。

   ただ、
   ＢＤＦ生成の実験でも使用した（石油由来の)メタノールや水酸化カリウムの投資、
   生成される廃スラリー（グリセリンと水酸化カリウムの混じったもの）の処理の問題など、
   石油精製のように大規模に行ううえでは、クリアしないといけない問題も多くあるとされています。

   「自然エネルギーについて考える」ことを目的とした
   『空土　自然エネルギーツアー』。

   今年は実験的にヒマワリ栽培から搾油までを行いましたが、
   皆さん、どのように感じられましたか？
